Mix Kewpie mayo with gochujang or chilli sauce to taste (typically 2:1 mayo to sauce).
3. Assemble the loaded fries
Spread fries on a large plate or shallow platter.
Scatter kimchi over the fries.
Drizzle the spicy mayo mixture.
Arrange the warm meat over top.
Add sliced spring onions, chilli, sesame seeds, coriander.
Finish with crispy onions for texture.
For a vegetarian version: sub in crispy tofu or tempeh strips and skip the meat. Add more kimchi or pickled veg.
